We had hitsumabushi for dinner in Nagoya in February 2026 and it was an experience worth remembering. If you want to experience Japanese culture, this is the way to do it. Grilled eel over rice, carefully prepared with patience and attention. Every bite shows the dedication behind it. The restaurant itself is elegant yet welcoming. Soft, warm lighting, clean lines, plenty of space between tables, and private rooms for small groups. The staff were professional, attentive, and genuinely kind. I don’t speak Japanese, but with a translation app and some photos of the menu, ordering was seamless. The eel takes time, about 25 to 30 minutes, because it is grilled with real care. That wait only makes the first bite more rewarding. When the dish arrived, it was beautifully presented. The eel rested perfectly on a bed of rice, steam rising gently. The aroma was sweet, smoky, and inviting. The first bite was incredible. Tender, flavorful, perfectly balanced. Every mouthful felt like a careful composition, like a dance on the palate. My wife shared the same feeling, appreciating both the food and the thoughtfulness of the service. Dessert was simple pudding with green tea. Thoughtful and refined, it reflected the care put into the whole experience. Would I visit again? Absolutely. Some places offer service. This place offers care and craftsmanship. That combination is rare, and it is what keeps you coming back. Enjoy.
MI tried a Nagoya specialty Hitsumabushi. It was a dish of grilled eel (unagi) served over a bed of rice, accompanied by a variety of condiments and a flavorful broth. The eel at Tatsumura was meticulously prepared, grilled to perfection with a crispy exterior and a tender, melt-in-my-mouth interior. The sweet and savory tare sauce enhanced the natural flavors of the eel, making each bite a delightful experience. The most unique aspects of Hitsumabushi at Tatsumura was the way it was traditionally enjoyed in three stages. This ritual was not just a meal but a culinary experience
